Thirsty Thursday: Cucumber Coolers

This past weekend, my best friend Jack came to visit me in Cambridge and I welcomed him with this refreshing beverage. It was a great way to beat the scorching summer heat. Cucumbers are a gourd fruit that is often used as a vegetable. I find cucumbers so versatile. In the summers, I pickle them, add them to salads, juice them, and drink them in cocktails and coolers.  This recipe comes (again) from Super Natural Every Day by Heidi Swanson (Can you tell I am a fan?). This really was phenomenal and I have a (somewhat picky) friend to verify this!

Cucumber Cooler

From Super Natural Everyday by Heidi Swanson

Makes 1 pitcher, about 4 servings

1 cucumber, partially peeled

1/2 cup cold water

3 cups ice cubes

1/3 cup mild honey

Juice of 1/2 lime

1/4 tsp salt

 

In a blender, combine the cucumber, water, ice, honey, lime juice, and salt. Pulse until completely smooth. Find some friends to share with!
